VINIFICATION: still barrel, 15-20 days of fermentations with temperature controlled (28-32°C)
AGEING: in stainless wood vats for two year.
– The colour is garnet red with orange reflections;
– The bouquet is characteristic, ethereal, pleasing and intension a pleasantly spicy base;
– The flavour is dry, full, robust, harsh but velvety and harmonic.
PAIRINGS: meat dishes, game, ripe cheese.
DEGREE: 13-14% alc.vol.
TEMPERATURE OF SERVICE: 18-20°C
